BARBECUED SALMON SPREAD

Leftover barbecued salmon fillet? Transform it into a savory spread for the cocktail hour or slather it on toasted bagels for brunch.

    Ingredients

    • 2 tablespoons mayonnaise
    • 2 teaspoons Half Way Tree Country Pepper Hot Sauce
    • 4 cornichons, finely diced
    • 1 tablespoon minced red onion
    • 6 ounces Rum BBQ Roasted Salmon [note: add link]
    • Salt and freshly ground pepper
    • Salt and vinegar potato chips or crackers, for serving

    Preparation

    In a medium bowl, mix the mayonnaise with the hot pepper sauce, cornichons and onion. Flake the salmon with a fork and stir it into the mayonnaise mixture. Season with salt and pepper.
