SPICED RUM-GLAZED CARROTS

    Ingredients

    • 5 medium-large carrots (¾ pound), peeled and sliced ⅓-inch thick on a wide diagonal
    • 1 tablespoon extra-virgin olive oil
    • Salt and freshly ground pepper
    • 3 tablespoons Half Way Tree Spiced Rum BBQ Sauce
    • 1 teaspoon honey
    • ¾ teaspoon finely grated orange zest

    Preheat the oven to 425°F. Line a rimmed baking sheet with parchment paper.

    Spread the carrots on the parchment paper in a single layer, toss with the olive oil and season with salt and pepper. Roast, turning occasionally, until almost tender, about 10 minutes.

    Combine the barbecue sauce, honey and orange zest in a small bowl and brush on the carrots to coat. Roast until the carrots are tender, glazed, and browned in spots, about 5 minutes longer.
