JAMAICAN COFFEE BURGERS WITH BBQ ONIONS
Serves 4
The savory coffee notes in our Jamaican Coffee Island Sauce make it the perfect foil for juicy burgers and sautéed onions, infusing them with layers of rich, sweet flavor. Mixing the sauce directly into the meat seasons the burgers all the way through as they cook and keeps them from drying out, no matter how well done you like them. Make a double batch of the onions if you are so inclined; you’ll think of countless ways to use them, including an easy, festive cocktail cheese ball.

Blue Mountain BBQ Onions
Heat the oil in a large nonstick skillet over medium-high heat. Add the onions, season with salt and pepper and cook, stirring frequently, until softened and browned at the edges, about 10 minutes.
In a small bowl, stir together the barbecue sauce and the mustard, then stir the mixture into the onions. Reduce the heat to medium and continue to cook until the onions are tender and thoroughly coated with sauce, about 3 minutes. Remove from the heat.
Burgers
In a bowl, season the ground meat with salt and pepper and mix in the barbecue sauce. Divide the meat into 4 equal portions and form into patties. Season generously on both sides with salt and pepper.
Heat a large skillet and oil it lightly. Add the burgers and cook over medium heat until well browned, 4 to 5 minutes per side for medium.
Set the burgers on the buns and top with any desired fixings, then mound BBQ onions generously on top. Pass additional sauce at the table.
