BARBECUED SALMON SPREAD

Leftover barbecued salmon fillet? Transform it into a savory spread for the cocktail hour or slather it on toasted bagels for brunch.
Ingredients
- 2 tablespoons mayonnaise
- 2 teaspoons Half Way Tree Country Pepper Hot Sauce
- 4 cornichons, finely diced
- 1 tablespoon minced red onion
- 6 ounces Rum BBQ Roasted Salmon [note: add link]
- Salt and freshly ground pepper
- Salt and vinegar potato chips or crackers, for serving

In a medium bowl, mix the mayonnaise with the hot pepper sauce, cornichons and onion. Flake the salmon with a fork and stir it into the mayonnaise mixture. Season with salt and pepper.
