GRILLED SCALLOP SKEWERS WITH MANGO GLAZE

Serves 8-12 as an appetizer

    Ingredients

    • 8 thin slices prosciutto
    • Four large sea scallops, quartered
    • Salt and freshly ground black pepper
    • ¼ cup Half Way Tree Mango Ginger Sauce plus more for brushing and dipping
    • 32 basil leaves
    • Salt and freshly ground black pepper
    • Extra-virgin olive oil and Mango-Lime Sauce, for brushing
    • Lime wedges, for serving

    Preparation

    Tear the prosciutto lengthwise into strips. Place one strip on the work surface and place a dab of Mango ginger sauce at one end. Top with a piece of scallop and a basil leaf and wrap the prosciutto around the scallop. Secure with a skewer. Repeat to make 32 skewers.

    Light a grill or heat a grill pan until hot. Brush the grill with oil and grill the scallops over high heat for 2 minutes, turning often. Brush with Mango Ginger Sauce and grill, turning and brushing with more sauce, until the prosciutto is crisp and the scallops are firm. Serve with lime wedges and more sauce for dipping.
